Why chick-fil-a cool wrap is rated high

Two different mechanisms are at work in one wrap. First is aging and culturing: cheddar is an aged cheese, and months of aging is exactly the situation where bacteria leave histamine behind in a protein-rich food. The cultured buttermilk in the dressing is the same story in liquid form, milk that bacteria have been allowed to work on. A young, unaged cheese would not sit in the same place, which is why the monterey jack in here only rates moderate. The grilled chicken filet, lettuce, green cabbage, egg yolk, and distilled vinegar are not what pushed this into the high column. Lower-histamine alternatives

There is no lower-histamine wrap or sandwich on Chick-fil-A's published lower list, so this one does not have a real stand-in at the chain. The only item listed as lower there is Green Leaf Lettuce, which is not a meal. Being straight about it: if you need a low-histamine lunch, this menu does not offer one, and rebuilding the Cool Wrap into a safe item is not possible when the dressing stays.

How to lower the risk

If you are ordering it anyway, ask for it without cheddar cheese and without avocado, the two components Chick-fil-A publishes as able to be left off. That removes two of the four high drivers. What it does not do is make the wrap low: the cultured buttermilk and lime juice concentrate in the dressing remain, the monterey jack remains at moderate, and the item is still rated high.
