Cabbage

Low histamine

Fresh cabbage is low in histamine, but fermented versions like sauerkraut or kimchi are a different story entirely.

Raw or cooked cabbage is generally low in histamine and doesn't appear to trigger histamine release.

  • Fermentation changes everything — once cabbage is fermented (sauerkraut, kimchi), it becomes one of the highest-histamine foods around due to bacterial activity during the fermentation process

  • Fresh vs. stored — fresh cabbage holds up well, but pre-cut or aging cabbage can slowly accumulate more histamine over time
