- The preservatives are worth knowing about — propionic acid and benzoic acid are in it to keep it fresh. They do not carry histamine, but some people with histamine intolerance find benzoate preservatives bother them independently, so if you react to a plain tortilla, that is a more likely suspect than the corn.
- The gums and enzymes are neutral — cellulose gum, guar gum, and the enzymes are dough helpers. They do not ferment the dough or add anything flagged.
- Two tortillas are still two tortillas — since the level is set by what the tortilla is made of and not by handling, ordering more of them does not change the picture the way an extra scoop of something flagged would.
