Why cellulose gum is rated low
Cellulose gum (you'll also see it as carboxymethyl cellulose or CMC on labels) is made from wood or cotton fibre, which is essentially plant structure, not protein. Histamine forms when specific bacteria act on the amino acid histidine in protein-rich foods, and there's simply nothing here for that process to grab onto. On top of that, cellulose gum mostly passes through you undigested, acting more like a fibre than a food. It's added in tiny amounts to thicken and stabilise, so it doesn't drive histamine up in the products that contain it.
What changes your risk
- The additive itself is neutral — cellulose gum doesn't ferment, age, or spoil into histamine, so its presence on a label isn't a red flag by itself.

If you're scanning labels and want other thickeners and gums that are generally low-histamine, cellulose gum keeps company with things like guar gum, locust bean gum, pectin, and plain cornstarch or rice starch. Some people find certain gums bother their digestion (bloating or gas from the fibre), but that's a gut-tolerance issue, not histamine. The ingredient to actually watch on the same labels isn't a gum at all: it's yeast extract or genuinely fermented flavourings, which are the histamine-relevant additives.
How to enjoy it
There's nothing special you need to do to make cellulose gum safe, since it's inert from a histamine point of view. The useful habit is to read past it: if a product lists cellulose gum, glance at everything else in the ingredients and check whether the base is a fresh, low-histamine food or something aged, cured, or fermented.
