Low histamine

Fresh corn is low in histamine and doesn't have known histamine-releasing properties, making it generally well-tolerated.

  • Fresh vs. processed — plain fresh or frozen corn is typically fine; heavily processed corn products (like certain sauces or fermented corn derivatives) may be a different story

  • Canned corn — canned versions are usually still low-histamine, though some people with sensitivities notice they do better with fresh or frozen over canned
