Seitan

Moderate histamine

Seitan is concentrated wheat gluten, which isn't inherently high in histamine but may be harder to tolerate for people with histamine intolerance who also have gluten sensitivity.

Seitan is made by washing wheat dough until only the gluten protein remains. The histamine concern here is less about the food itself and more about the overlap between histamine intolerance and gluten sensitivity.

  • Gluten sensitivity overlap — research suggests that many people with histamine intolerance also have difficulty with gluten, and the two conditions may share underlying mechanisms involving gut permeability and inflammation

  • Flavored versions add more concern — store-bought seitan is often marinated in soy sauce, vinegar, or spices, all of which are higher-histamine additions on top of the base ingredient

Plain, homemade seitan without marinades is a simpler option, though if you notice a pattern with wheat-based foods, it's worth paying attention to.
