  • Freshness — Gizzards are best when very fresh or frozen soon after processing. A package that has lingered in the case is the main thing that pushes them higher.
  • Frozen vs. fresh-thawed — Gizzards that were frozen quickly and thawed in the fridge just before cooking tend to be gentler than ones that sat thawed for days.
  • Cold storage — Keeping them fridge-cold or frozen slows bacteria. Warmth on the counter or a slow thaw at room temperature is where histamine can build.
  • Cook soon, eat soon — Use them the day you buy or thaw them. Cooking does not remove histamine already present, so starting fresh matters more than the cooking method.
  • Leftovers — Cooked gizzards, like other cooked meats, can climb over several days in the fridge, so freeze extras rather than keeping them for a week.

Lower-histamine alternatives

If gizzards feel like too much of a gamble, a very fresh whole chicken thigh or breast cooked the same day is a lower-histamine way to get chicken. Freshly cooked turkey works too. Pair with rice and fresh non-liberator vegetables to keep the overall plate light.

Buy gizzards frozen when you can, or the freshest chilled ones available, and cook them the day you thaw them. Thaw in the fridge rather than on the counter.
