Whiskey

High histamine

Whiskey is distilled, so it's low in histamine itself — but the alcohol blocks histamine clearance, and barrel aging adds complexity.

As a distilled spirit, whiskey doesn't carry much histamine from production — but the alcohol slows DAO, the enzyme your body uses to break down histamine from all sources.

  • Barrel aging — unlike clear spirits like vodka, whiskey spends time in wood barrels, which can introduce additional compounds including tannins and other substances that some people with histamine sensitivity also react to

  • Darker vs. lighter styles — heavily aged, darker whiskeys like bourbon or Scotch tend to be more complex in composition than lighter whiskeys or younger expressions, which may matter for sensitive individuals

If you enjoy whiskey occasionally, lighter or shorter-aged expressions may be a simpler option than heavily aged varieties.
