Cognac
Cognac is a distilled spirit — distillation removes histamine, but the alcohol itself blocks DAO, your body's main histamine-clearing enzyme.
As a distilled spirit, cognac does not contain significant histamine — histamine is non-volatile and doesn't survive the distillation process. The concern is the alcohol itself.
-
Alcohol blocks DAO — the primary issue with cognac (and all spirits) is that alcohol temporarily impairs DAO, the enzyme your body relies on to break down histamine from other foods you eat alongside it
-
Aging and reported sensitivity — some people report older or more complex aged spirits feel harder to tolerate than younger styles, though the reason for this is not clearly established; it may relate to other congeners developed during barrel aging rather than histamine content
Of the aged spirits, younger eau-de-vie or unaged clear spirits tend to be reported as gentler options.
