Brandy
Brandy is a distilled, aged spirit — the alcohol blocks your body's ability to clear histamine, and some people report more sensitivity to aged styles.

Lower-histamine alternatives
There is no genuinely low-histamine version of brandy, because the DAO-blocking effect rides along with the alcohol. If it is the warm, after-dinner ritual you are after, a warm cup of a fresh herbal infusion or a mug of ginger in hot water gives you that without the alcohol. Among alcohols, distilled spirits like brandy sit lower than wine or beer because distillation leaves histamine behind, but any alcohol can still interfere with DAO, so lower is not the same as safe.
How to lower the risk
If you are going to have brandy, the most useful thing you can do is keep the food around it genuinely low in histamine and keep the amount down, so your DAO has the easiest possible job.
