Wheat flakes are made by simply steaming and rolling whole wheat kernels — a minimal process that doesn't introduce histamine-raising steps.

  • Similar to oat flakes — from a histamine perspective, plain wheat flakes and plain oat flakes are comparable; neither involves fermentation or aging

  • Commercial varieties may differ — flavored or fortified wheat flake products sometimes include malt extract, dried fruits, or preservatives that push the histamine level higher

Plain, unflavored wheat flakes used in porridge or home baking are typically one of the easier wheat formats to work with.
