Strawberry (dried)

High histamine

Dried strawberries concentrate the histamine-liberating effect of fresh strawberries and often add preservatives on top.

Fresh strawberries are already among the better-known histamine liberators — drying them removes water but keeps the problematic compounds in a more potent form.

  • Concentration amplifies the effect — a small amount of dried strawberries delivers the liberating potential of many fresh ones, making portion size even more significant than with fresh fruit

  • Additives are common — dried strawberries frequently contain added sugar, citric acid, or sulfites; sulfites in particular are known to cause reactions in sensitive individuals, and the combination of additives may add to the overall load

If fresh strawberries are already tricky for you, the dried version is generally considered a step up in intensity.
