Moderate histamine

Pre-sliced packaged cheese often uses aged cheese as its base, which already carries moderate histamine from the aging process.

Sliced cheese is frequently made from cheeses that have already gone through some aging, and then spends additional time in packaging before you eat it.

  • Aging in the base cheese — most sliced cheeses use semi-aged varieties as their starting point, which already carry moderate histamine levels from the aging process itself

  • Time in packaging — while significant histamine buildup during commercial packaging is unlikely, older opened packs stored for a while in your fridge may be worth approaching with more caution than freshly opened ones

Buying smaller quantities and using them quickly is generally a good practice with sliced cheese.
