Feta's histamine content comes from the fermentation and brining it goes through during production.

  • Fermentation — bacteria break down proteins during aging, and histamine is a natural byproduct of that process

  • Brine aging — feta sits in salty liquid as it ages, which can continue to increase histamine levels compared to a fresh, unfermented cheese
