Halloumi

Moderate histamine

Halloumi is a semi-aged brined cheese — the fermentation and salt-curing process means moderate histamine buildup.

Like feta, halloumi goes through a brining and mild aging process that allows histamine to accumulate.

  • Semi-aging — halloumi isn't aged as long as hard cheeses, so histamine levels are typically lower than parmesan or aged cheddar

  • Freshness matters — halloumi purchased closer to its production date and stored properly tends to have lower histamine than one that's been sitting
