Why natamycin is rated low

Histamine builds when certain bacteria break down protein during fermentation, curing, aging, or poor storage. Natamycin is a mould inhibitor, not a bacterial ferment, and the tiny surface amount used to keep fungus off a rind does not carry meaningful histamine. The real signal here is what natamycin is usually ON: it shows up on the labels of hard, aged, or waxed cheeses and on some cured sausages, and those underlying foods are frequently high in histamine. So the additive is a clue about the product, not the problem itself.

  • The additive amount — The natamycin layer is a thin surface treatment, so it contributes essentially nothing to your histamine load by itself.

What else is safe

Because natamycin is a marker for aged cheese and cured meat, the useful move is to choose genuinely lower-histamine base foods rather than a different additive. For cheese-like needs, very fresh options such as fresh ricotta or a fresh cheese eaten young tend to be gentler than hard aged types. For protein, very fresh cooked poultry or fresh or frozen-at-sea white fish is a far safer swap than cured sausage. If you simply want to avoid additives, look for products with a plain, short ingredient list and no rind treatment.

You do not need to hunt down or avoid natamycin for histamine reasons. Instead, read past it to the actual food: is this a young fresh cheese or a long-aged one, a fresh meat or a cured one?
