No, mineral water is not high in histamine. It is plain water with dissolved minerals, so there is no protein for bacteria to turn into histamine and nothing fermented or aged about it.
Why mineral water is rated low
Histamine forms when certain bacteria break down the amino acid histidine in protein-rich foods, usually during fermenting, curing, aging, or warm storage. Mineral water has none of that. It is just water plus naturally dissolved minerals like calcium, magnesium, and bicarbonate, whether it is still or naturally carbonated, so there is nothing for histamine to build from.
What changes your risk
- Plain vs flavored — plain still or sparkling mineral water is the safe version. Flavored waters often add citrus, berry, or other extracts, and citrus flavoring in particular can be a histamine liberator for some people.
- Added extras — check the label for added fruit juice, 'natural flavors,' or preservatives. Straight mineral water usually has none, but some fancy or flavored bottles do.
- Carbonation itself — the bubbles are just carbon dioxide and do not affect histamine. If sparkling water bothers you, that is usually the fizz on a sensitive stomach, not histamine.
- Storage — an opened bottle left out is fine for a long time because there is no food for bacteria. Just keep it clean and capped; there is no histamine clock ticking here.
What else is safe
If you want other reliably low options, plain still water, filtered tap water, and plain spring water are all in the same safe camp. Things that look like a harmless upgrade but are worth a second look: flavored or 'infused' waters with citrus or fruit extracts, tonic water (fine on histamine but has quinine and sweeteners some avoid), and of course kombucha, which is fermented and not comparable to plain mineral water at all.
How to enjoy it
Buy plain mineral water, still or sparkling, and read the ingredient line: you want water and minerals, nothing else. If you like a splash of flavor, add your own fresh cucumber, a few blueberries, or fresh mint rather than reaching for a pre-flavored bottle. There is no special storage trick needed beyond keeping the bottle capped and clean.
