Carrots are one of the more reliably tolerated vegetables, and their juice carries the same low-risk profile when freshly made.

  • No known histamine activity — carrot juice doesn't contain significant histamine, isn't a known liberator, and doesn't appear to affect how your body breaks histamine down

  • Fresh is best — like most juices, carrot juice can degrade quickly once opened; bottled versions with preservatives or citric acid may be less well-tolerated
