Why leavening is rated low

Histamine builds when certain bacteria feed on protein-rich foods during fermentation, aging, or warm storage. Chemical leavening skips all of that: baking soda (sodium bicarbonate) reacts with an acid salt such as monocalcium phosphate or cream of tartar to release carbon dioxide bubbles the moment they meet moisture and heat.   • Sourdough is different — Naturally leavened or sourdough breads rely on a live wild-yeast-and-bacteria culture, which is genuine fermentation and can run higher. That's a separate ingredient story from a boxed baking powder.
  • Aluminum-containing types — Some baking powders use sodium aluminum phosphate. This is a personal-preference and additive-sensitivity matter, not a histamine one, but aluminum-free versions are widely sold if you'd rather avoid it.
  • The rest of the recipe matters more — Leavening itself is a non-issue, so what actually raises risk in a baked good is the other ingredients: aged cheese, cured meat, chocolate, or a very ripe fruit filling.

What else is safe

Good news: you don't need a swap, since baking powder, baking soda, and cream of tartar are all low-histamine chemical leaveners. If a recipe calls for something that ferments the dough, that's where the difference shows up. Quick breads, soda breads, and baking-powder biscuits stay in the friendlier camp, while sourdough, salt-rising bread, and anything leavened with an active yeast starter are the ones that can carry more histamine.

How to enjoy it

Reach for plain baking powder, baking soda, or cream of tartar and store them dry and tightly sealed so they keep their lift. Baking powder loses potency over time (not to histamine, just to age), so replace an old tin if your bakes stop rising. If you want to skip the aluminum salts, look for a box labeled 'aluminum-free'.
