Traditional corn tortillas are made from masa (treated corn flour) and water — a short, uncomplicated ingredient list.

  • No fermentation involved — unlike sourdough or some flatbreads, corn tortillas don't go through any fermentation process that would allow histamine to accumulate

  • Watch the fillings, not the tortilla — the tortilla itself is rarely the concern; aged cheeses, fermented salsas, pickled toppings, or cured meats are typically where histamine enters a taco or wrap
