If you want a stir-fried noodle plate at home, try fresh rice noodles or plain wheat noodles tossed with very freshly cooked chicken, cabbage, carrot, and zucchini, seasoned with fresh ginger, a little garlic, and olive oil instead of soy or Worcestershire sauce. That gives you the warm, savory, noodly feel without leaning on aged fermented condiments.
How to lower the risk
If you are cooking it yourself, buy the chicken or meat fresh and cook it the same day rather than using leftovers, and reach for fresh aromatics (ginger, scallion, garlic) for flavor instead of the bottled sauces. Serve it straight off the heat rather than making a big batch to reheat over several days. Eating out, know that the sauce is unavoidable in a real yakisoba, so this is a dish many histamine-sensitive people choose to skip.
