Lower-histamine alternatives
There is not a low-histamine version of yaki udon that keeps its real character, since the flavor depends on soy and oyster sauce and often bonito. For a similar warm, stir-fried noodle bowl, try fresh rice noodles or plain udon tossed with very fresh cooked chicken and fresh vegetables like cabbage, carrot, scallion, and bok choy, seasoned with fresh garlic, ginger, and a little olive oil or plain sesame oil instead of the fermented sauces. That gives you the stir-fried-noodle experience without the soy, oyster sauce, or bonito.
How to lower the risk
If you are cooking it at home, start from plain udon and build the sauce from fresh garlic, ginger, scallion, and a splash of plain broth rather than soy and oyster sauce, and skip the bonito flakes. Use a very fresh cooked protein like chicken rather than seafood, and cook only what you will eat that meal, since the reheated leftovers are where a saucy, protein-heavy noodle dish tends to climb.
