Low histamine

Plain whey is low in histamine when fresh, but the type it comes from and how it's processed can make a difference.

Whey is the liquid that separates from milk during cheese or yogurt making — its histamine level depends on what it came from and how it was handled.

  • Fresh whey stays low — straight from fresh cheese production, whey hasn't had much time or bacterial activity to generate histamine, keeping it in the low category

  • Processed whey products vary — whey protein powders and concentrates go through additional processing and may behave differently than fresh whey, so it's worth paying attention to how you respond to those separately

Fresh whey used quickly is generally fine, but processed whey products are a separate conversation.
