Vanilla extract

Vanilla extract is alcohol-based, and alcohol is a known DAO blocker — the main consideration here.

Pure vanilla extract is made by steeping vanilla beans in alcohol, which is what gives it that concentrated flavor.

  • The alcohol factor — alcohol is a well-established DAO blocker, meaning it can make it harder for your body to break down histamine from other foods; even small amounts may matter for sensitive individuals

  • Alternatives exist — vanilla powder, vanilla bean paste, or non-alcohol vanilla flavor may be better tolerated if the alcohol component is a concern

Small amounts used in baking are often fine for most people, but if you're particularly sensitive, vanilla powder is an easy swap.
