Low histamine

Fresh turkey is naturally low in histamine — the main risk comes from processed versions like deli slices or smoked turkey.

Unprocessed turkey doesn't contain significant histamine on its own — the issue arises when it's cured, smoked, or stored for extended periods.

  • Processing changes everything — smoked, cured, or deli turkey goes through processes that allow histamine to build up, making fresh turkey a very different choice from packaged turkey products

  • Leftovers and storage — cooked turkey left in the fridge for more than a day or two can accumulate histamine as bacteria get to work, so freezing leftovers promptly is a helpful habit
