Tofu (silken)

Low histamine

Silken tofu is fresh and unfermented, keeping histamine levels low — similar to regular fresh tofu.

Like other fresh tofu varieties, silken tofu is made without fermentation, which is what keeps histamine from building up.

  • Texture, not process — the 'silken' label refers to its smooth, custard-like texture, not a different production method; it's still unfermented and low-histamine

  • Storage sensitivity — silken tofu has a high water content and can spoil faster than firmer varieties once opened, so using it promptly after opening is a good habit

Checking that the package says 'fresh' or 'silken' rather than fermented or marinated helps avoid higher-histamine soy options.
