Tomatoes are histamine liberators, and drying concentrates that effect — sun-dried versions are among the most problematic forms.

Tomatoes prompt your body to release its own stored histamine, and removing the water during drying makes everything more concentrated.

  • Concentration effect — drying intensifies all the compounds in tomatoes, so a small amount of sun-dried tomato can have a much bigger impact than the same weight of fresh

  • Compared to fresh tomato — fresh tomatoes are already considered high, but sun-dried versions are typically several steps above that on the sensitivity scale
