Spaghetti
Plain dried spaghetti is low in histamine, but the sauces it's typically paired with are often high-histamine.
Spaghetti itself — just durum wheat and water — doesn't bring much histamine to the table on its own.
-
The sauce is usually the issue — tomato-based sauces, wine reductions, and aged cheeses are all high in histamine, making classic spaghetti dishes a stacking problem rather than a pasta problem
-
Freshness still matters — freshly cooked pasta is fine, but leftover pasta sitting in sauce overnight will accumulate more histamine as it sits
Pairing plain cooked spaghetti with tolerated sauces like olive oil, herbs, or fresh vegetables tends to work much better.
