Shiitake

Moderate histamine

Shiitake mushrooms may prompt histamine-like reactions in some people, with dried versions being more concentrated and potentially more reactive.

Shiitake are among the more histamine-relevant mushroom varieties — some people with histamine intolerance report reacting to them, though the specific compounds responsible haven't been clearly identified in the research.

  • Unique compounds — shiitake contain compounds not found in common button mushrooms, and some sensitive individuals report responding to them even in moderate amounts; what drives that reaction isn't fully established

  • Dried shiitake are more intense — drying concentrates everything, including whatever may be triggering the response; fresh shiitake tends to be better tolerated than the dried form often used in broths and Asian cooking

If you enjoy shiitake, starting with small amounts of fresh mushrooms is a reasonable way to test your own response.
