Moderate histamine

Mushrooms are one of the more debated foods in the histamine world — sources disagree on their classification, and individual tolerance varies widely.

Some food lists place mushrooms in the high category, others in moderate, and some people tolerate them just fine. The science here is genuinely unsettled.

  • Classification varies — SIGHI rates mushrooms as incompatible, but other clinical sources are less definitive; whether the concern is direct histamine content, other biogenic amines, or something else entirely isn't clearly established

  • Fresh vs. dried matters a lot — fresh mushrooms used soon after purchase are generally better tolerated than dried mushrooms, mushroom powders, or concentrated mushroom broths, which are more commonly reported as triggers
