Moderate histamine

Parmesan and wine — both common in risotto — are among the higher-histamine ingredients in Italian cooking.

Risotto's moderate rating comes mainly from two classic ingredients: aged cheese and white wine.

  • Parmesan — this is a long-aged hard cheese, which makes it one of the higher-histamine cheeses; even a small amount added at the end brings the dish up noticeably

  • White wine — alcohol blocks the enzyme your body uses to break down histamine, and wine also contains histamine of its own, creating a double effect

A risotto made without wine and finished with butter or a fresh mild cheese rather than parmesan tends to sit more comfortably.
