- Aged and darker soy sauces — longer-fermented and thicker soy sauces have had more time for that bacterial process, so some people find them harder than a light splash, though any soy sauce is fermented.
- Other fermented add-ins — dishes like this often also include oyster sauce, hoisin, or cooking wine, each adding more on top of the soy sauce.
- Cooking the sauce down — simmering or reducing the sauce concentrates what is already there rather than cooking it off, so a sticky glaze is not gentler.
Lower-histamine alternatives
The fresh, lower-histamine version of this dish is simply pork cooked without the fermented sauce. Take very fresh pork, cook it the same day, and season it with fresh garlic, ginger, scallion, fresh herbs, a little salt, and olive or sesame oil instead of soy sauce. That gives you savory, cooked pork without the fermented seasoning that made the original high. Be aware that the usual soy stand-ins like coconut aminos, tamari, and fish sauce are also fermented, so they do not solve the problem.
How to lower the risk
Think of the soy sauce as the ingredient to leave out, not to swap. Buy pork close to when you will cook it, keep it cold, cook it through fresh, and build the flavor from fresh aromatics and a savory broth or salt base rather than a bottled fermented sauce. If you are eating out, a plainly cooked fresh pork dish with garlic and ginger is a far better bet than anything described as soy, teriyaki, hoisin, or black bean.

Is low-sodium soy sauce any lower in histamine?
No. Low-sodium versions are still fermented the same way, so they carry histamine just like regular soy sauce. Less salt does not mean less histamine.
Does cooking the soy sauce burn off the histamine?
No. Heat does not remove histamine that already formed during fermentation, and reducing the sauce down actually concentrates it into a smaller amount.
Is tamari or coconut aminos a safe substitute?
Not for histamine. Tamari is fermented soy, and coconut aminos is also fermented, so neither is a reliably low-histamine swap. Fresh aromatics are the safer route.
