Porcini are a flavorful mushroom that appears in the moderate histamine range — and like most mushrooms, how they're prepared matters a lot.

  • Dried porcini are higher risk — drying concentrates everything in the mushroom, including compounds that may affect histamine-sensitive people; fresh porcini tend to be better tolerated

  • Umami intensity — porcini are particularly high in glutamates, which some histamine-sensitive people also react to, so the response may feel stronger than with milder mushroom varieties
