Pair any of these with a genuinely gluten-free bread and you have sidestepped both the peanut and the wheat. Skip almond and cashew butters as "safe" stand-ins, since nuts are commonly flagged too.
How to lower the risk
If you are reacting to sandwiches, the peanut butter is the first thing to pull, not the last. Rebuild the sandwich around a freshly cooked, freshly chilled poultry filling and a gluten-free bread, and eat it the day you make it rather than letting a protein filling sit for days in the fridge. Keep any nut butter you do keep in the fridge once opened so it at least stays fresh-tasting, but understand that with a liberator, fresh does not equal safe for you.
