Macadamia nuts are unfermented and unaged, making them one of the more comfortable nut choices for histamine sensitivity.

Like most plain nuts, macadamia nuts don't go through any process that would raise histamine levels — no fermentation, curing, or aging.

  • Plain is best — raw or dry-roasted macadamias without added seasonings tend to stay low; flavored versions may include vinegar, spices, or other ingredients worth a closer look

  • Rich in fat — macadamias are high in natural oils, and like other fatty foods, freshness matters; older or improperly stored nuts can oxidize, which some sensitive people find harder to tolerate

Fresh, plain macadamias from a well-sealed pack are typically the most comfortable option.
