Chia seeds are unprocessed and unfermented, placing them comfortably in the low-histamine category.

Chia seeds don't undergo fermentation or aging, so there's no process driving histamine levels up.

  • Naturally low — plain chia seeds are not known to contain significant histamine or to trigger the body to release its own stored histamine

  • Watch what you mix them with — chia pudding made with fermented dairy or citrus-heavy ingredients could raise the overall histamine load of the dish

On their own, chia seeds are generally one of the more straightforward ingredients to work with.
