  • Freshness is everything — like all meats, histamine can accumulate with time and temperature after slaughter; quick chilling and proper storage keep levels low, and this applies equally to llama as to beef or chicken

  • Regional availability means varied sourcing — llama meat is more common in South American cuisines and may be less standardized in handling elsewhere, so knowing the source and freshness is especially useful
