Even so, a restaurant kitchen preps ahead and holds things warm through a service, so freshness varies more than it would at home. The rating above comes from the chain's published ingredients. IHOP's grits are low in histamine and are one of the easier things to order off a diner breakfast menu. They are degerminated white corn grits with salt and a standard set of added vitamins, and nothing on that list is fermented, aged, cured, or a known histamine liberator.

Why ihop grits are rated low

Grits are a starch, not a protein food, and histamine needs protein to form in any meaningful amount. IHOP lists the ingredients as degerminated white corn grits, salt, calcium carbonate, reduced iron, niacinamide, BHT and citric acid, thiamin mononitrate, riboflavin, and folic acid.
