Hollandaise sauce

High histamine

Butter-heavy hollandaise may be harder to manage for those who also report sensitivity to dairy, compounding any histamine load.

Hollandaise is mostly butter and egg yolk, and the dairy component is the main consideration here.

  • Dairy and histamine sensitivity — many people with histamine intolerance also report difficulty with dairy; this is a well-documented clinical observation, though the exact mechanism is not fully established

  • Egg yolks — egg yolks are generally considered low in histamine and are not recognized as histamine liberators in the primary literature; they are typically one of the more tolerable parts of this sauce

If you tolerate clarified butter (ghee) better than regular butter, that may be worth experimenting with in homemade versions.
