  • No fermentation or aging — plain corn pasta is simply extruded and dried, a process that doesn't build histamine the way fermentation or long aging does

  • The sauce is usually the variable — corn pasta on its own is rarely the problem; tomato-based, wine-reduced, or anchovy-containing sauces are where histamine tends to sneak in
