Chocolate (dark)

High histamine

Cocoa triggers your body to release its own stored histamine, making dark chocolate one of the more potent liberators.

Dark chocolate is problematic not because it's loaded with histamine, but because cocoa prompts your body to release histamine it has stored.

  • High cocoa content — the more cocoa, the stronger the effect, which is why dark chocolate tends to cause more trouble than milk or white varieties

  • No fermentation needed — unlike aged cheeses or wine, this reaction comes from cocoa itself, so even fresh, high-quality dark chocolate carries the same concern

Smaller amounts may be better tolerated than a full serving, and white chocolate (no cocoa solids) is often the gentler option.
