Sodium erythorbate
Sodium erythorbate is low in histamine. It is a close relative of vitamin C used as an antioxidant in cured meats.
Used alongside curing salts to stabilise colour and speed the curing process.
The erythorbate itself is inert. Its presence is a strong signal that the product is CURED, and cured meat is high in histamine, so the ingredient is worth noticing even though it is not the cause.
