Why sodium bicarbonate is rated low
Histamine builds when certain bacteria break down the protein building block histidine during fermentation, curing, aging, or warm storage. Baking soda is just a plain chemical salt with no protein and nothing for those bacteria to act on, so it does not develop histamine no matter how long it sits in your cupboard. It works in cooking as a raising agent and an acidity regulator, and neither of those roles involves any microbial activity that could create histamine.

- The bicarbonate itself is not the issue — Pure sodium bicarbonate stays inert and histamine-free indefinitely, so shelf life is about how well it still fizzes, not about safety for HIT.
- What you mix it into matters more — In a recipe, your reaction risk comes from the other ingredients (aged cheese, cocoa, cured meat, overripe fruit), not the baking soda.
- Baking powder is not the same thing — Baking powder is baking soda plus an acid and often cornstarch; still low-histamine, but check the label if you react to corn or added acids.
- Watch for combo products — Some effervescent or antacid tablets pair bicarbonate with citric acid or flavorings; the citrus-derived acids may bother liberator-sensitive people, not the bicarbonate.
- Storage is about performance, not histamine — Keep it dry and sealed so it stays active; a clumped or flat batch is a baking problem, never a histamine one.
What else is safe
If you need a raising agent and want to keep things simple, plain sodium bicarbonate and single-acting baking powder are both reliably low-histamine. Potassium bicarbonate is a similar low-histamine option some people use for lower sodium. The things to be careful with are not substitutes for baking soda but the flavor partners people reach for alongside it: lemon juice and vinegar (both problematic for many with HIT), and cocoa, which is a known trigger. Cream of tartar is generally considered fine.

Buy any standard food-grade baking soda; brand does not matter for histamine. Store it in a sealed container away from moisture and strong odors, since it readily absorbs both.
