Why shallot is rated low

  • Sprouting — A green sprout in the center is not a histamine problem; the shallot is still fine, though some people find the sprout bitter and pull it out for taste.
  • Pickling or fermenting — Shallots are low fresh, but pickled shallots in vinegar or fermented condiments are a different food and can bother sensitive people, so keep those separate in your mind from the plain bulb.
  • Storage — Keep them dry and cool with airflow, not sealed in a damp bag, where trapped moisture speeds spoilage.

You do not need a substitute here, since shallots themselves are a good pick. If you want other low-histamine allium flavor, fresh onion, garlic, leek, and chives are all generally well tolerated. The ones to treat differently are the preserved versions: pickled onions, fermented or aged black garlic, and jarred crispy fried shallots with additives are not the same as a plain fresh bulb.

How to enjoy it

Buy firm, dry-skinned shallots and store them somewhere cool and airy, like a pantry basket, rather than a sealed drawer. Slice or dice only what you need and cook them soon after cutting; softening them slowly in a little olive oil gives a mellow, sweet base for almost any dish. Refrigerate cut leftovers in a covered container and use them within a day or two, checking that they still smell clean and oniony.
