Sayadieh is moderate, with lemon and warm spices sitting on top of fish and rice.

  • Cumin, cinnamon, and pine nuts add to the middle — all three land moderate, so they sit alongside the lemon while the rice and onion stay milder. Very fresh fish matters most here, since fish climbs quickly as it ages.

Using the freshest fish you can and leaving off the lemon keeps this closer to its gentle base.
