Moderate histamine

Eggs themselves are low-histamine, but fillings like cheese, cured meats, or tomatoes can make an omelette moderate.

A plain omelette is actually one of the calmer egg dishes, but what goes inside changes things quickly.

  • Egg whites — egg whites are commonly reported as a histamine liberator, meaning they may prompt the body to release stored histamine; some people with histamine sensitivity find that dishes heavy in egg white relative to yolk are harder to tolerate

  • Common fillings — cheese, ham, smoked salmon, and tomatoes are all high-histamine or liberating additions that typically turn a simple omelette into a moderate or high concern

A plain or vegetable-filled omelette using whole eggs is usually better tolerated than loaded versions.
