How to lower the risk

The lowest-risk way to enjoy anything meatloaf-like is to cook ground meat fresh and eat it the same day, rather than saving it for sandwiches. If you do make a loaf, cool it quickly in the fridge instead of leaving it on the counter, and eat it within a day. Leave off the ketchup glaze, and use fresh bread. Deli or pre-packaged meatloaf slices tend to be higher, since they have been stored longer.
