Kale

Low histamine

A nutrient-dense leafy green that's low in histamine and doesn't typically interfere with how your body processes it.

Kale doesn't contain significant histamine and isn't known to trigger the body's own histamine release or block breakdown enzymes.

  • Fresh vs. stored — freshly cut kale is your best bet; pre-cut or pre-washed bags that have been sitting may accumulate small amounts of histamine as the leaves age

  • Compared to spinach — spinach is often flagged in histamine intolerance, but kale is generally considered a much more tolerable leafy green

Fresh or lightly cooked kale tends to be the most reliably gentle option.
