Hot dogs are made from finely ground meat trimmings that are emulsified, cured, smoked, and packaged — nearly every step adds to the histamine picture.

  • Mixed trimmings and grinding — using various cuts and grinding them fine gives bacteria maximum surface area to produce histamine during processing and storage

  • Curing plus smoking — like bacon, hot dogs are typically both cured and smoked, stacking two histamine-raising processes on top of the base meat

Cooking them fresh from a just-opened pack is generally better than reheating leftovers.
