Goose fat

Moderate histamine

Goose fat is a rendered animal fat — generally lower in histamine than aged or fermented foods, but freshness and storage matter.

Pure rendered goose fat doesn't inherently contain high histamine, but how it's made and stored affects where it lands for sensitive people.

  • Rendering process — fresh, properly rendered goose fat is fairly neutral histamine-wise; the concern rises if the fat is rendered from older meat or handled at low quality, where bacterial activity on any residual protein could be a factor

  • Storage sensitivity — keeping goose fat well-sealed and refrigerated or frozen helps maintain quality; older or improperly stored fat may be more of a concern than a freshly rendered batch

Freshly rendered fat stored in a sealed container in the fridge or freezer is the most straightforward version to work with.
